Zucchini Slice

A great classic from Margaret Fulton
5 eggs
1 cup grated Cheese
4 cups grated Zucchini
12 Spring Onions chopped
1 cup light Oil
100g Ham, chopped
1 cup self raising Flour
1 teaspoon Seeded Mustard

Lamington tin, approx 18 x 28cm

Beat the eggs lightly.
Add all of the remaining ingredients and season with freshly ground black pepper. 

Put mixture in a lined lamington tin
Cook at 180
°C for 45 minutes.

Cut in to rectangles and serve as entree or with with a salad.
