Fruit Mince

Filler for Mince Pies and Cassata
350g Seedless Raisins
225g Mixed Peel
225g Sultanas
450g Peeled Apples
50g Glacé Cherries
100g Blanched Almonds
225g Currants
2 cups Brown Sugar
1 Lemon
1 small Orange
2 teaspoons Mixed Spice
1/2 teaspoon Grated Nutmeg
100 - 175g melted Butter
75ml Brandy or Rum*
Chop raisins, mixed peel, half of the sultanas, apples, cherries and almonds finely, or put through a mincer.
Add the remaining sultanas and currents.
Stir in brown sugar, grated lemon and orange rind, the juice of 1 lemon, spices, butter and brandy.
Mix well and put into a large jar. Cover and chill.
Stir every day for a week. Resist temptation to taste test.
Mixture can be kept for a few weeks in the refrigerator.

* Brandy can be replaced by the juice of 1 orange, but then the mixture can not be made in advance.
