Product Characteristics
A free flowing grated cheese, which is cream in colour, mild to strong aroma and bitey,
piquant flavour, leaving no bitter after taste in the mouth.

Intended Use Of The Product
Grated Parmesan is predominately used as an ingredient various dishes and as a topping to pasta dishes.

Packaging
Grated cheese is packed into a bag then packed into boxes.
10 x 1kg bags per box
6 x 2kg bags per box
3 x 3kg bags per box
1 x 10kg bags per box

Shelf Life
6 months when stored under refrigerated conditions.
Opened bags to be consumed within 7 days.

Method of Preservation
Product is preserved by vacuum flushing the bags with a mix of CO2 and N2
to remove most of the oxygen from the bags.
Refrigerated temperatures are also used to reduce the growth of any spoilage organisms.

Sensitive Population Identified
This product will affect people with allergens to milk and milk products.

Distribution
All cheese is sold into the food service sector either directly to the end user or to distributors.
Products must be distributed and stored below 4oC at all times.
