Shredded Mozzarella Cheese.

Product Name
Alessandro’s Traditional Shredded Mozzarella.

Product Characteristics
A free flowing shredded cheese that is cream in colou, has a mild milky flavour, good melting and stretching properties, and browns slightly without burning when cooked.

Intended Use Of The Product
Shredded Mozzarella is predominately used as a topping for pizzas or pasta products.
It is also ideal as an ingredient for various other dishes.

Packaging
Shredded cheese is packed into a bag then packed into boxes.
5 x 2kg bags per box.
2 x 5kg bags per box.

Shelf Life
6 months when stored under refrigerated conditions.
Opened bags to be consumed within 7 days.
Freezing the product will extend the shelf life.

Method of Preservation
Product is preserved by vacuum flushing the bags with a mix of CO2 and N2 to remove most of the oxygen from the bags.
Refrigerated temperatures are also used to reduce the growth of any spoilage organisms.

Sensitive Population Identified
People with allergens to milk and milk products will be effected by this product.

Distribution
All cheese is sold into the food service sector either directly to the end user or to distributors.
Products must be distributed and stored below 4oC at all times.
